Cut the wonton wrappers into triangles or strips depending on your intended use.
Line a baking sheet with a paper towel. In a heavy bottomed pot, add the neutral oil and heat over medum high until the oil reaches 375F.
Add a few wonton pieces at a time, allowing space in between to prevent any from sticking. Fry for 15-30 seconds, or until they turn light golden brown.
Remove the wonton wrappers from the oil with a spider strainer and place on the paper towel to remove excess oil.

Fry the wonton wrappers until JUST light golden brown. Once removed from the oil, they will continue to brown and darken. Maintaining a consistent oil temperature is key to prevent overcooking the wonton chips. I use an infrared thermometer or candy thermometer to ensure the oil stays at 375F, adjusting the heat as necessary.To make crispy wonton strips, just cut the wonton wrappers into 1/2 inch strips, then fry them the same way! Use a slotted spoon to separate the wonton strips once they are in the oil.
