Thick Cut Tortilla Chips or Fritos Scoops for dipping
Instructions
Preheat the oven to 375F.
In a saute pan over medium high heat, cook the bacon until crispy, about 4-5 minutes. Remove the bacon from the pan to a paper towel to drain, then saute the jalapenos in the same pan with the rendered bacon fat for 2 minutes until tender.
In a 9x13 baking dish or cast iron pan, add the diced jalapenos, cream cheese, mayonnaise, sour cream, salt, pepper, garlic powder, onion powder, paprika, mozzarella cheese, and cheddar cheese. Use a spatula or wear a glove and mix until combined.
In a small bowl, mix the crushed Fritos with the parmesan cheese and sprinkle evenly over the dip.
Bake the dip for 20-25 minutes until golden and bubbly. Remove from the oven and let cool for 15 minutes before serving. Top with thinly sliced jalapenos (if desired) and serve with thick cut tortilla chips or Fritos scoops for dipping.

Notes
I recommend using freshly shredded cheese for this recipe. Many preshredded cheese include anti-caking agents which will affect the texture of the dip.For a spicier kick, you can add another diced jalapeno or ½ teaspoon of cayenne pepper.I like using Fritos Scoops (vs. regular fritos) for this recipe which are thicker. You can crush them and they'll stay crispy as the topping. You can use the rest as scoops for the tip!
