Slice beef at an angle against the grain to ¼” thick strips and marinade for 20 minutes with the salt, pepper, baking soda, shaoxing wine, light soy sauce, cornstarch, and neutral oil.
Cut the carrot, cabbage, onions, and scallion whites to ½” pieces and chop garlic. Set aside near the pan.
In a bowl, mix together sauce by combining light soy sauce, oyster sauce, dark soy sauce, sesame oil, white pepper, sugar, cornstarch, water, and msg. Set aside near the pan.
Cook noodles 1 minute under package directions in a large pot of boiling water, Drain the noodles then lightly coat them in half of the sesame oil. Mix the noodles to prevent them from sticking.
In a wok or large pan, heat 1/4 cup of neutral oil over high heat until just smoking. Add the marinated beef and fry for 2-3 minutes (in batches) until golden brown and cooked through. Place the beef in a bowl, and remove all but 2 tbsp of oil from the pan.
In the oil over high heat, fry garlic for 15 seconds until fragrant, then immediately add the onions, scallion whites, carrot, cabbage. Season with 1/2 tsp of salt and stir fry for 2 minutes until the cabbage is wilted but still crisp.
Add back the beef, noodles, sauce then mix to combine until the sauce has thickened. Add the scallion greens, and the remaining sesame oil, mix well and enjoy!

Cut into Similar Sizes - I like to cut my protein and vegetables into similar, uniform pieces so they cook evenly; it also makes for a better mouthfeel.Noodle Tips
I used lo mein noodles by the brand Twin Marquis; they're sold in the refrigerated section of 99 Ranch.
Cook the noodles 1-2 min less than the instructions, as they'll continue to cook in the pan.
After boiling, rinse the noodles with cold water to stop the cooking. Shake them dry, then toss in a tablespoon of sesame oil to prevent them from sticking.
Store any leftover Beef Lo Mein in an airtight container in the refrigerator for up to 3-4 days. Reheat until warmed through in the microwave - I like to cover them with a damp paper towel to help them lightlly steam.
