Ingredient Tips

  • neutral oil – my go to neutral oil is avocado oil but you can also use canola, vegetable, or grapeseed oil. You want to use an oil with a high smoking point and no flavor – don’t use sesame oil or olive oil!
  • wonton wrappers – my go-to wonton wrappers are by the brand “Dynasty” – I get them from my 99 Ranch but even my local Ralph’s / Pavilions have started carrying them. You can use whatever brand you can find. (These are the same wonton wrappers I use to make my Pork and Shrimp Wontons, Chicken and Cilantro Wontons, or with Din Tai Fung Spicy Wonton Sauce!)

How to Make Fried Wonton Chips

1. Cut the Wonton Wrappers

The first step is to cut the wonton wrappers into triangles or strips – this is up to you and your intended use. Triangles are better for dips (strips tend to break for me), whereas I prefer strips for salads.

2. Fry the Wonton Wrappers

Line a baking sheet with a paper towel. In a heavy bottomed pot, add the neutral oil and heat over medum high until the oil reaches 375F.

Add a few wonton pieces at a time in a single layer, allowing space in between to prevent any from sticking. Fry for 15-30 seconds or until they turn light golden brown. Keep in mind that they’ll continue to darken once you remove them from oil.

PRO TIPS

CJ’s Expert Tips + Storage

  • Use a neutral oil with a high smoking point, like avocado, canola, vegetable, or grapeseed oil – do NOT use olive oil or sesame oil!
  • My go-to brand for wonton wrappers are “Dynasty” but you can use whatever wonton wrappers you have access to.
  • When frying the wonton wrappers, drop in a few pieces at a time and allow enough space in between the wrappers so they do not stick together.
  • Fry the wonton wrappers until JUST light golden brown. Once removed from the oil, they will continue to brown and darken.
  • Maintaining a consistent oil temperature is key to prevent overcooking the wonton chips. I use an infrared thermometer or candy thermometer to ensure the oil stays at 375F, adjusting the heat as necessary.
  • Store any leftover Fried Wonton Strips/Chips in an airtight bag at room temperature. They’ll stay relatively crispy for a couple days. Personally, I find that these taste best when fried fresh.

To make crispy wonton strips, just cut the wonton wrappers into 1/2 inch strips, then fry them the same way! Use a slotted spoon to separate the wonton strips once they are in the oil.
