Spam Fried Rice – 15 min! (VIDEO)

Spam Fried Rice was one of my favorite meals growing up and is still a weeknight dinner MVP in my house! It uses leftover rice, is super versatile, and PACKED with flavor!!

Spam Fried Rice is so good!

I call Spam Fried Rice my fridge clean out meal because you can throw in any vegetables that you need to use up and it’ll still taste great! If you love fried rice, make sure to try Chicken Fried Rice, Shrimp Fried Rice, Kimchi Fried Rice, Egg Fried Rice or Mushroom Fried Rice!

Ingredient Tips

Refer to the recipe card for the full list of ingredients and measurements!

  • white rice – I recommend using long grain white rice for the lower moisture content. Whatever rice you use, make sure it is not fresh – fresh rice will have too much moisture, resulting in soggy fried rice. Always use leftover old rice (cooked previously and refrigerated for at least one day).
  • spam – I like to cut the spam into small cubes. You can cut it into any size or shape you prefer.
  • frozen veggies – I use frozen veggies for convenience; however, you can use fresh veggies of your choice if you prefer! My only recommendation would be to cut the vegetables into similar shaped sizes so they cook evenly.
  • MSG – I use MSG in moderation as an optional flavor enhancer!

How to Make Spam Fried Rice

Cook Spam – Dice the spam into bite size pieces (about 1/2 inch cubes). In a wok or large pan, add half of the neutral oil over medium high heat. Add the spam and cook for 2-3 minutes until crispy and the fat has rendered. Remove to a paper towel lined bowl to drain any excess fat from the spam, leaving any residual fat in the pan.

Cook Aromatics and Vegetables – In the residual oil over medium high heat, add the garlic and scallion whites and stir fry for 15 seconds. Add the frozen veggies and continue stir frying for 1-2 minutes until the vegetables are crisp and tender.

Scramble Eggs –Push the vegetables to the side and add the remaining neutral oil to the empty part of the pan. Add the egg and scramble until 80% cooked through and mix into the vegetables.

Add Rice and Season – Turn the heat to high, add the cooked rice and stir fry for 3-5 minutes, using a spatula to separate the grains of rice until they are dry and separated. Season with soy sauce, salt, white pepper, sugar, msg. Add back cooked spam and toss until thoroughly mixed. Finish with a drizzle of sesame oil and sesame seeds and enjoy!

PRO TIPS

CJ’s Storage Tips

Store any leftover Spam Fried Rice in an airtight container in the refrigerator for up to 3-4 days. This is a great meal to prep in advance, as it keeps well and reheats easily. If I have the time, I like to reheat it in a hot wok or pan – you an also reheat in the microwave until warmed through.

If you want to freeze this, you can do so in freezer bags for until 3 months. I recommend portioning it out before freezing!

Notes

Customize to Your Liking – You can use almost any vegetable and it’ll still taste great – that’s why it’s a fridge clean out meal for me! Make sure to chop the vegetables into small, even sizes so they cook evenly. Here are some suggestions: corn, carrots, peas, mushrooms, broccoli, asparagus, zucchini or cabbage!
Use Old Rice! – Freshly steamed rice has too much moisture, which will make your fried rice soggy and mushy. If you need to dry out your rice quickly, I like to lay the rice in a thin layer on a baking sheet and place in the refrigerator uncovered (at least overnight is best)
Avoid Overcrowding – My KEY TIP would be to avoid crowding your pan – crowding can lead to your Spam Fried Rice not cooking thoroughly and becoming mushy. If you think your dish will be crowded, use a larger pan, cast iron, or dutch oven, OR cook in batches.
Storage – Store any leftover Spam Fried Rice in an airtight container in the refrigerator for up to 3-4 days. This is a great meal to prep in advance, as it keeps well and reheats easily. If I have the time, I like to reheat it in a hot wok or pan – you an also reheat in the microwave until warmed through.

    Best quick week night dinner. Can sub grilled yellow for green onion. I cheat with “Minute Rice” and works amazing. Add any frozen veg, bell peppers, peas, carrots, broccoli, or favs. As recipe uses eggs and then follow the seasoning , yeah, always comes together perfectly. We LOVE LOVE LOVE!!!

    Nice & easy! Subbed chicken for spam this time, delicious recipe that’s versatile for any protein. Thank you! Although too much white pepper for my taste, 1/2 tsp is probably plenty.
