My Honey Roasted Carrots are a super easy, one pan vegetable side that can be made for your next weeknight meal or even for the holidays! I love how roasting carrots brings out the natural sweetness that pairs perfectly with the fresh herbs and butter!

Honey Roasted Carrots are so simple and delicious – when roasted, the combination of oil, honey, and herbs brings out the natural sweetness and flavors of the carrots! I love roasting vegetables, like Roasted Green Beans with Bacon, Roasted Cauliflower or Roasted Brussels Sprouts. They go amazing with main dishes like Meatloaf, Braised Short Ribs, Fried Chicken, or Steak with Peppercorn Sauce!

Ingredient Tips + Customization Ideas

Refer to the recipe card for the full list of ingredients and measurements!

  • Carrots – Use similar sized carrots so they cook evenly.
  • Olive oil – Use the highest quality olive oil you have for this recipe.
  • Honey – I like using a little bit of honey to bring out more sweetness in the carrots – you can skip this if you find carrots already sweet.
  • Fresh thyme and rosemary – I recommend fresh herbs but if you need to use dry, halve the amount.

How to Make Honey Roasted Carrots

Season the Carrots – Preheat the oven to 400F. Add the fresh garlic and chopped herbs to the carrots on the baking sheet, along with kosher salt, black pepper, olive oil and honey. Mix the herbs, seasoning, olive oil and honey until the carrots are evenly coated. This is optional but I like to top them with a pad of Compound Butter before roasting.

Roast the Carrots and Garnish to Serve – Roast the carrots on a baking sheet at 400F for about 30 minutes or until the carrots are fork-tender. Before serving, I like to top my Honey Roasted Carrots with additional fresh parsley and herbs. Enjoy!

Mix Well and Spread Evenly on the Sheet – Mix the carrots with the seasoning, olive oil, and honey to ensure each one is coated thoroughly and evenly. Make sure the carrots have enough space between each one to evenly roast.

Storage and Reheating – Store any leftover Roasted Carrots in an airtight container in the refrigerator for up to 3 days. Reheat the leftover carrots in the air fryer at 350°F for 6-8 minutes until warmed through. Alternatively, you can reheat them in the oven at 350°F for 10-12 minutes until warmed through.

Ingredients 

Instructions 

  • Preheat oven to 400F.
  • Chop garlic, and mince fresh thyme and rosemary and set aside.
  • In a baking tray, place carrots and season with kosher salt, black pepper. Add the chopped garlic, thyme, and rosemary to the carrots, then drizzle with olive oil and honey. Mix together well until all the carrots are evenly coated in the seasonings.
  • Add a pad of butter to the carrots (optional) prior to baking.
  • Roast in the oven for 25-30 minutes or until blistered and the carrots are tender.

Notes

Use Similar Sized Carrots – Depending on your oven and the size of your carrots, cooking times may vary. I recommend using similarly sized carrots to ensure even cooking throughout. Check them occasionally until they are roasted and tender to your liking.
Customize the Seasoning to Your Lliking
  • Add crushed red pepper flakes to kick up the heat
  • Top carrots with Compound Butter for extra butter-y, garlicky, herby flavors
  • Toss the carrots in toasted bread crumbs to add a crispy texture
  • Add grated parmesan to make Parmesan Roasted Carrots
  • Add onion powder to infuse another layer of flavor to the carrots
