These Honey Roasted Carrots are a super easy, one pan vegetable side that can be made for your next weeknight meal or even for the holidays! I love how roasting carrots brings out the natural sweetness that pairs perfectly with the fresh herbs and butter – these are roasted until perfectly blistered, fork tender, and so delicious!

Ingredient Tips + Customization Ideas
Refer to the recipe card for the full list of ingredients and measurements!
- Carrots – Use similar sized carrots so they cook evenly – otherwise you’ll find that some carrots are over and/or under cooked. I like to use the “Les Petites Carrots” from Trader Joes.
- Olive oil – Use the highest quality olive oil you have for this recipe. Aside from the seasonings, your oil is the key ingredient that will turn your carrots into a showstopper of a side, so you want to use a good quality oil.
- Honey – I like using a little bit of honey to bring out more sweetness in the carrots – you can skip this if you find carrots already sweet. Up to you!
- Fresh thyme and rosemary – I love using fresh herbs when roasting vegetables – they make all the difference in adding so much flavor and aroma to the dish!
You can customize the seasoning to your preference – I like to keep it simple but here are some other ideas:
- Add crushed red pepper flakes to kick up the heat
- Top with Compound Butter for extra butter-y, garlicky, herby flavors
- Toss in toasted bread crumbs to add a crispy texture
- Add grated parmesan to make Parmesan Roasted Carrots
- Add onion powder to infuse another layer of flavor to the carrots
Roasting is one of my favorite ways to prepare vegetables, as it really lets the natural flavors of the vegetables (like these carrots) shine! Some of my other favorites are Roasted Green Beans with Bacon, Roasted Cauliflower or Roasted Brussels Sprouts!
Recipe Instructions
1. Wash and Peel Carrots
Preheat oven to 400F.
The first step in this recipe is to wash and peel your carrots (removing the stems if desired). Place them on a baking tray. I am using smaller 5-6 inch carrots for this recipe. If you are using larger ones, cut carrots to your desired shape prior to seasoning.
2. Season the Carrots
Chop garlic. Remove the rosemary and thyme leaves from their branches (using a cheese grater and running them through is a great hack!) Finely chop up the herbs.
Add garlic and chopped herbs to the carrots on the baking sheet, along with kosher salt, black pepper, olive oil and honey.
Mix the herbs, seasoning, olive oil and honey until the carrots are evenly coated.
This is optional but I like to top them with a pad of Compound Butter before roasting. this gives the carrots an extra herb-y, garlicky, butter-y flavor that cannot be beat!
3. Roast the Carrots and Garnish to Serve
Roast the carrots on a baking sheet at 400F for about 30 minutes or until the carrots are fork-tender.
Before serving, I like to top my Honey Roasted Carrots with additional fresh parsley and herbs. Enjoy!

Expert Tips + Storage
Use Similar Sized Carrots – Depending on your oven and the size of your carrots, cooking times may vary. I recommend using similarly sized carrots to ensure even cooking throughout. Check them occasionally until they are roasted and tender to your liking.

Mix Well and Spread Evenly on the Sheet – Mix the carrots with the seasoning, olive oil, and honey to ensure each one is coated thoroughly and evenly. Make sure the carrots have enough space between each one to evenly roast.
Storage and Reheating – Store any leftover Roasted Carrots in an airtight container in the refrigerator for up to 3 days. Reheat the leftover carrots in the air fryer at 350°F for 6-8 minutes until warmed through. Alternatively, you can reheat them in the oven at 350°F for 10-12 minutes until warmed through.
Main Dish Ideas
Roasted Carrots are the perfect vegetable side to your favorite main dishes, like Meatloaf, Braised Short Ribs, Fried Chicken, or Steak with Peppercorn Sauce! During grilling season, they go great with grilled proteins like Grilled Steak or Grilled Chicken Thighs. If you want to use the air fryer, make Air Fryer Chicken Thighs, Air Fryer Chicken Skewers, or Air Fryer Chicken Wings! I love including the carrots with other sides like Mashed Potatoes, Mac and Cheese, or Crispy Smashed Potatoes!

Honey Roasted Carrots
Ingredients
- 2 lb carrots, peeled and trimmed
- 2 tbsp olive oil
- 1/2 tbsp kosher salt
- 1/2 tsp black pepper
- 5 cloves garlic, minced
- 1 tbsp honey
- 1 tbsp fresh thyme
- 1 tbsp fresh rosemary
Instructions
- Preheat oven to 400F.
- Chop garlic, and mince fresh thyme and rosemary and set aside.
- In a baking tray, place carrots and season with kosher salt, black pepper. Add the chopped garlic, thyme, and rosemary to the carrots, then drizzle with olive oil and honey. Mix together well until all the carrots are evenly coated in the seasonings.
- Add a pad of butter to the carrots (optional) prior to baking.
- Roast in the oven for 25-30 minutes or until blistered and the carrots are tender.
