These air fryer steak bites are super tender and take less than 10 minutes to cook in the air fryer! They’re tossed in a flavorful herb garlic butter and perfect with a side of Roasted Brussels Sprouts (or Air Fryer Brussels Sprouts), Roasted Cauliflower, Air Fryer Broccoli, Honey Roasted Carrots, and Mashed Potatoes!

Ingredient Tips

Refer to the recipe card for the full list of ingredients and measurements!

  • I used ribeye steak but you can also use sirloin or another marbled cut of steak. You want a steak with nice streaks of fat running through the steak (known as marbling) so that the steak will be tender and juicy!
  • seasonings – I used kosher salt, black pepper, onion powder, soy sauce, and garlic to season the steak quickly. You can use any combination of seasonings you prefer or your preferred steak seasoning.
  • neutral oil – my go-to neutral oil is avocado oil but you can also use canola, vegetable, or grapeseed oil.
  • unsalted butter – the steak is tossed in a delicious garlic herb butter, similar to the butter used for Benihana Fried Rice or my popular Garlic Herb Compound Butter! Make sure to use unsalted butter to avoid the steak becoming too salty.

How to Make Air Fryer Steak Bites

Marinate and Air Fry the Steak Bites: Cut the steak into 1 inch cubes and pat them completely dry. Add the steak to a bowl and season with salt, black pepper, soy sauce, half of the minced garlic, onion powder, and neutral oil. Mix well until combined and marinate for 15 minutes. Add the marinated steak in a single layer in the air fryer basket and air fry at 400F for 6-7 minutes until browned and the steak bites are medium rare (internal temperature reads 130F).

Make the Garlic Herb Butter: While the steak is cooking, melt butter in a small pan over medium heat. Add the rest of the minced garlic and cook for 30 seconds until the garlic is fragrant. Mix in the dried parsley and black pepper until combined and cook for another 15 seconds. Toss the steak bites in the garlic her butter and enjoy!

CJ’s Recipe & Storage Tips

  • The steak needs to be as dry as possible before marinating – this will help it brown in the air fryer! If it’s not dry, the oil and seasonings will dilute with the moisture from the meat and steam, rather than “fry” in the air fryer. Make sure to pat the steak dry thoroughly with paper towels after cubing them will remove as much moisture as possible.
  • Store any leftover Air Fryer Steak Bites in an airtight container in the refrigerator for up to 3-4 days. Reheat quickly in the microwave to warm through.
  • Store any leftover Garlic Herb Butter in an airtight container in the refrierator for up to 1 week – you’ll notice that it’ll solidify but the change in texture should not impact the taste significantly.

Ingredients 

  • 1 lb ribeye steak, You can also use Sirloin or another marbled cut of steak
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper

  • 8 cloves garlic, minced and divided in half; half used for the Garlic Herb Butter below
  • ½ teaspoon onion powder
  • 1 tablespoon neutral oil

Instructions 

  • Cut the steak into 1 inch cubes. Place them on a paper towel lined plate and pat them completely dry. Add the steak to a bowl and season with salt, black pepper, soy sauce, half of the minced garlic, onion powder, and neutral oil. Mix well until combined and marinate for 15 minutes.
  • Add the marinated steak in a single layer in the air fryer basket and air fry at 400F for 6-7 minutes until browned and the steak bites are medium rare (internal temperature reads 130F).

Notes

  • Fat = flavor. Look for the steaks of fat in the steak, known as marbling, which will turn out to be a juicier end result. I like to choose a cut like ribeye which has higher fat content and will be juicier after cooking.

  • Feel free to adjust the seasonings to your preference or use your preferred steak seasoning! For example, you can add seasonings for heat (red pepper flakes, cayenne pepper, hot paprika) or other herbs of your choice (rosemary, thyme)!
  • Store any leftover Air Fryer Steak Bites in an airtight container in the refrigerator for up to 3-4 days. Reheat quickly in the microwave to warm through. Store any leftover Garlic Herb Butter in an airtight container in the refrierator for up to 1 week – you’ll notice that it’ll solidify but the change in texture should not impact the taste significantly.
