A Note from CJ

This is the best Beef Lo Mein!
I love making this for a crowd because it’s always the first dish to go – it’s THAT good! Pair it with your favorite Chinese Take-Out dishes like Egg Rolls, Egg Drop Soup or Hot and Sour Soup, Beef and Broccoli, Egg Fried Rice, Sesame Chicken or Black Pepper Chicken! Make Chicken Lo Mein or Shrimp Lo Mein if you don’t have beef!
Unbelievably delicious dish, better than our local Chinese restaurant’s version. I made this along with CJ’s Egg Fried Rice and my family LOVED it!
You’ll never need takeout again. The flavors were exactly what we were looking for, it was not overly salted and had significantly less oil than the local place serves. It’s also incredibly easy to make.
Ingredient Tips
Refer to the recipe card for the full list of ingredients and measurements!
- lo mein noodles – my favorite brand for lo mein is Twin Marquis – I find them in the refrigerated section at my local 99 Ranch!
- flank steak – you can also use skirt steak, flat iron, or top round steak.
- shaoxing wine – If you can’t use it, you can substitute with mirin, sherry, or even chicken broth.
- vegetables – I used carrot, cabbage, white onion, and scallions; you can use any vegetable of your choice!
- msg – I like to use MSG in moderation as an optional flavor enhancer.
How to Make Beef Lo Mein
Marinate Beef, Cut Vegetables, and Mix Sauce – Slice beef at an angle against the grain to ¼” thick strips and marinade for 20 minutes with the salt, pepper, baking soda, shaoxing wine, light soy sauce, cornstarch, and neutral oil. Cut the carrot, cabbage, onions, and scallion whites to ½” pieces and chop garlic. Set aside near the pan. In a bowl, mix together sauce by combining light soy sauce, oyster sauce, dark soy sauce, sesame oil, white pepper, sugar, cornstarch, water, and msg. Set aside near the pan.
Cook Noodles – Cook noodles 1 minute under package directions in a large pot of boiling water, Drain the noodles then lightly coat them in half of the sesame oil. Mix the noodles to prevent them from sticking.
Cook Beef – In a wok or large pan, heat 1/4 cup of neutral oil over high heat until just smoking. Add the marinated beef and fry for 2-3 minutes (in batches) until golden brown and cooked through. Place the beef in a bowl, and remove all but 2 tbsp of oil from the pan.
Fry Aromatics and Vegetables – In the oil over high heat, fry garlic for 15 seconds until fragrant, then immediately add the onions, scallion whites, carrot, cabbage. Season with 1/2 tsp of salt and stir fry for 2 minutes until the cabbage is wilted but still crisp.
Add Beef, Noodles, Sauce, and Mix – Add back the beef, noodles, sauce then mix to combine until the sauce has thickened. Add the scallion greens, and the remaining sesame oil, mix well and enjoy!

PRO TIPS
CJ’s Storage & Reheating Tips
Store any leftover Beef Lo Mein in an airtight container in the refrigerator for up to 3-4 days. Reheat until warmed through in the microwave – I like to cover them with a damp paper towel to help them lightlly steam.

Notes
- I used lo mein noodles by the brand Twin Marquis; they’re sold in the refrigerated section of 99 Ranch.
- Cook the noodles 1-2 min less than the instructions, as they’ll continue to cook in the pan.
- After boiling, rinse the noodles with cold water to stop the cooking. Shake them dry, then toss in a tablespoon of sesame oil to prevent them from sticking.

Sounds great. Am going to try this tonight but I have no scalloons. Will that be a problem?
You should be totally fine without them!
