Spicy Garlic Ramen is so easy and so good!
Sometimes you just need to whip together something quick and this Spicy Garlic Ramen is the easiest way to upgrade your instant ramen into a delicious meal!
I love eating it with my favorite Korean side dishes (or “banchan”) like Korean Braised Tofu, Korean Braised Potatoes, Korean Fish Cakes, Korean Egg Roll, Korean Bean Sprout Side Dish, Korean Marinated Eggs (Mayak Eggs), and Korean Spinach Side Dish!
This recipe turns ordinary ramen into outstanding ramen. Easy to prepare and delicuous. Perfect for a quick lunch!
Ingredient Tips
Refer to the recipe card for the full list of ingredients and measurements!
- dried ramen noodles – I used the Korean Shin Ramen dried noodles because I love how the noodles taste; use any dried ramen noodles of your choice.
- gochugaru (or dried red chili flake) – gochugaru is Korean red chili pepper flakes that are vibrant in color, smoky in flavor, and adds a lot of heat! If you are new to using this ingredient or sensitive to spice, consider using 1/2 of what the recipe calls for.
- oyster sauce – I love the one made by Lee Kum Kee, specifically the label with the lady on it.
- Sriracha – adjust this to your own heat preference; I personally substitute with my homemade chili oil.
- optional garnishes: I like to garnish my Spicy Garlic Ramen with freshly chopped scallion, crushed peanuts and extra chili oil!
How to Make Spicy Garlic Ramen
Mix Sauce and Saute Aromatics – In a small bowl, mix together light soy sauce, oyster sauce, sriracha, brown sugar, white pepper, and water. This is your sauce. Add the oil in a pan over medium high heat. Saute garlic, scallion and gochugaru until fragrant (about 30 seconds).
Cook Ramen and Mix with Aromatics, Gochugaru, and Sauce – Cook ramen noodles in boiling water until al dente. Reserve 1/2 cup of noodle cooking water. Add noodles directly to the sautéed aromatics and gochugaru, then add the premixed sauce. Add the noodle water a few tablespoons at a time loosen the sauce and cook over high heat until the sauce has absorbed into the noodles. The sauce should cling to the noodles but not be watery. Garnish with scallions and sesame seeds and enjoy!

PRO TIPS
CJ’s Recipe & Storage Tips
Noodle Water – I recommend reserving at least a 1/2 cup of noodle cooking water to loosen up the sauce if the noodles become too thick for your liking.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. The noodles may stick together but they will still taste delicious! Reheat with a splash of mwater in the microwave until warmed through and loosened.
You can make this sauce ahead of time and store in an airtight container in the refrigerator for up to 1 week. When ready, reheat in the microwave before tossing the noodles in them.

Spicy Garlic Ramen (VIDEO)

Ingredients
- 2 tbsp light soy sauce, low sodium

I found and now have Gochugaru, but missed that the recipe called for oyster sauce. Can fish sauce be substituted? Apologies if that is an ignorant question! Look forward to making another of your great dishes.
Hi Denise – fish sauce and oyster sauce are quite different, so I wouldn’t recommend substituting them in this case.

Made this the other night and unfortunately over cooked our ramen (that’s my bad) but the sauce was amazing! We are going to remake this and use the sauce in a broth to make a soupy ramen, which I’m sure will be just as incredible as the original recipe! Instagram is @samannewilliams
